Breakfast happens to be one of my favourite meals of the day. Finally – through some trial and error – I have rounded up some of what I honestly believe to be the best gluten free breakfast recipes on the internet. I’ll also sprinkle in some of my family’s favourite “regular” breakfasts that we don’t really follow a recipe for.
Banana Oatmeal Pancakes
My toddler and I will regularly make this recipe from Ambitious Kitchen blog. My father in law has also come to love them too, so they have made an appearance at dinner time more than once. These are perfect for toddlers since they are only sweetened with banana and are quite filling. We love that we can make the entire recipe in the blender, how it comes together so fast, it’s easy for the kids to help, and you don’t have to worry about measuring any gluten free flour!
The Fluffiest Gluten Free Pancakes
If you are looking for a classic ‘Canada Day breakfast’ type pancake, this recipe from Mama Knows Gluten Free will not disappoint. If I had to choose an absolute favourite pancake recipe, these would be it. I use Bob’s Red Mill 1-to-1 Gluten Free Baking flour. They get nice and crisp and golden on the outside and are just SO fluffy. *insert the little girl from Despicable Me fan-girling over how ridiculously fluffy these are.* Pair them with some breakfast sausage and maple syrup and I am absolutely drooling.
Easy + Delicious Gluten Free Waffles
Naturally, I go from pancakes to waffles. Mama Knows Gluten Free truly does some of my favourite breakfast food so don’t be surprised if you find more of her recipes in this round up. Her waffles are EASY and so freakin good. Again, they are so fluffy and crisp. Can you see a trend here? She uses Pilsbury Gluten Free Flour, but I haven’t seen that available around here so I have just used Bob’s Red Mill 1-to-1 Gluten Free Baking Flour and it has turned out beautifully. You’ll want to eat these hot off the waffle iron with some maple syrup, whipped cream, and fresh fruit!
Gluten Free Dutch Baby
Have you ever heard of the breakfast food called a Dutch Baby or German Pancake? I believe it is neither Dutch nor German, but it is simply divine and my husband asks for it constantly. It was even his birthday breakfast request this year. A little fancier than a normal pancake, it’s fluffy and rich and so easy. Perfect for hosting! The recipe I love is from Meaningful Eats Blog and it’s turned out great every time. I’ve tried this recipe with Bob’s Red Mill 1-1 Gluten Free Baking Flour, and Cup-4-Cup Gluten Free flour, and although both have tasted wonderful, the Cup-4-Cup definitely fluffed up and gave better texture in my opinion.
Frittata
Next up, is Frittata! We actually have this for dinner more often than breakfast but as it is technically a breakfast food.. into the breakfast round up it goes! I use Love and Lemons Blog recipe as a guide because for the life of me I can never remember the ratio of milk to eggs. But I usually just add whatever vegetables I want into it. One of my family’s favourite combinations are sweet potato, kale and goat cheese. Don’t knock it until you try it! Ours never turn out quite as pretty as this, but they are still delicious! It would be a fabulous addition to any gluten free brunch.
Egg Cups
Essentially mini frittatas, these are a great meal prep grab and go breakfast. This is one of the ones that don’t really have a recipe, but there are recipes out there if you would rather! Again, I use whatever veggies and meat are in my fridge, chop them up small and divide them between muffin tins. Add a single egg to each muffin tin cups and whisk them up with some salt, pepper, and shredded cheese. Cook at 350 for 20-25 minutes until cooked through. These are easy to freeze and warm up quick in the morning, which is perfect for when my kids (and I) wake up absolutely ravenous.
French Toast
So, I don’t think I’ve ever made French toast with an actual recipe before, ever. But it is definitely a favourite in our house, especially for using up that slightly too stale gluten free bread. Make it French and you’d never know it’s gluten free, or stale. We like to use egg (duh), a splash of milk, loooots of cinnamon, and just a little vanilla. Whisk it all up and dunk that gluten free bread! Never waste a slice of that incredibly over priced bread again.
Oatmeal
I probably have oatmeal at least twice a week for breakfast. I usually cook it with a pinch of salt and some cinnamon, sometimes a splash of vanilla. (If you haven’t guessed already, Im a huge fan of cinnamon and vanilla). I top it off with brown sugar, granola, and whatever fruit I’ve got around. I love it because it’s delicious and I can change it up with whatever fruit I want. Sometimes it’s banana, sometimes strawberries, blueberries, peaches (I even just throw a peach cup on there sometimes). I’ve cooked apple and thrown it in. Just make sure your oats are gluten free and you are golden.
Plain Old Scrambled Eggs
They are my favourite. Plain and simple. Nothing special. If I’m ever at someone else’s house, I almost always have scrambled eggs for breakfast because they are so easy, almost everyone will have eggs around, and obviously, they are gluten free!
These breakfasts are my family’s absolute favourites. My biggest tip for gluten free breakfast time is to stock up. Always have plenty of oatmeal, eggs, and fruit (fresh or frozen) around. That way you will never be left a pinch without any gluten free breakfast food. It’s the most important meal of the day, and for good reason! Nothing makes me more emotional or anxious about having to eat gluten free than when I’m hungry. If I’ve had breakfast at the very least I am able to make a plan for the rest of the day’s food.
